One of the unsung heroes of low-and-slow cooking. Neck bones bring plenty of beef flavor, connective tissue, and collagen to soups, stocks, stews, and braises. Give them time to simmer and they'll help create a rich, full-bodied broth while the meat becomes fall-apart tender. Not fancy... just really good beef doing what it does best.
