Round Roast

A lean, roughly 3–4 lb roast. Apply a liberal rub to the outside to form that beautiful crust, then straight into the oven in advance of Sunday dinner. Because it doesn't have a high fat content, make sure not to overcook it. Just like the pot roast, it certainly won't break the bank. Medium rare is ideal, especially with beef that is truly grass-fed.
